​Pickled Mustard Seeds make the world go round....


​See those beige caviar looking beads on our chicken liver + bacon jam crostini?  Those are pickled mustard seeds.  They are vinegary morsels that are pop in your mouth goodness.   The key to perfect mustard seeds boiling them in water and rinsing them 10 times before pickling them.  It's a labor of love....



Pass the hot sauce...powder?!?

​See that feta cheese looking crumble in our East Coast Plate to the left?  That's our bacon fat hot sauce powder!  I mean, what's better than bacon fat and hot sauce paired with sablefish, potatoes and clams?  Sounds super fancy, but really it's only three ingredients.  Get yourself some TAPIOCA MALTODEXTRIN (available via amazon) and save that bacon fat! Melt a couple tablespoons of bacon fat and add a few dashes of your favorite hot sauce.  Put the tapioca in your food processor (like two cups worth) and slowly drizzle in the hot sauce fat until the mixture looks like wet sand.  Voila!  Bacon fat hot sauce powder!  It will keep for two months in a jar in the fridge.
